Trained on the prestigious Ecole Lenotre, Ecole Du Grand Chocolat Valrhona, and Fauchon culinary colleges and delicatessens in Paris, Chef Yves started his profession as a pastry chef at Le Grand Hotel Du Cap Ferrat in France and has since taken his expertise and experience to the UAE, Russia, Indonesia, Croatia, Uzbekistan, Kuwait, Romania, Qatar, Maldives, and his hometown of Fort William in Scotland.

He has served at two Michelin star eating places, consulted with luxurious model accommodations for grand openings, pastry group coaching, and big celebration occasions, and established Café Chardon, his personal luxurious café and patisserie in Fort William. Chef Yves travels to Dubai with well-earned respect as a world-leading pastry chef.
